Chef Tony Polito’s Basic Homemade Hummus

Basic Homemade Hummus

Ingredients

  • 7 oz. Tahini
  • 4 Cloves of Garlic
  • 1 TBSP Parsley or Cilantro
  • 1 Can Chickpeas or Garbanzo Beans
  • 1 tsp Extra Virgin Olive Oil
  • 1/3 Cup Water
  • 1/2 Lemon (juice and zest)
  • Sea Salt to taste

Combine all of the ingredients in a food processor and pulse for eight seconds. To tailor hummus to your liking add more water for your desired thickness. Remember, you don't want to break your chip when you dip! Always taste before adding the sea salt.

Now be creative: With this foundation, you can add sauteed onions, lime juice, sun-dried tomatoes, chipotle sauce with peppers, pine nuts, cashews, walnuts, chili powder, cumin, coriander, cayenne pepper, or curry powder.
